My daughter is off to university again and with all those long and hard lectures she is always looking for healthy snacks to bring with her. These energybar cookies is super healthy. I made a batch for her today. Remember to let the batter rest for 10 minutes, it will help them not to fall apart. Salt is also important, if you leave that out they will lack flavour.
Roasted vegetables is a lovely side dish to almost everything. They are easy to prepare and cook.
You can use most root vegetables, they get deep and sweet in flavour. I also used bell pepper and cauliflower. Just remember not to trow them all in at the same time, they cook at different speed. Serve on a large platter, it is decorative and more inviting to your guest and family. I put a curry dip in the middle. In the summer I like to serve roasted vegetables with cold cuts like roast beef, cold chicken, ham or like I did sliced turkey breast. This year I grew my own radishes which was very easy to do. It took about 5 weeks from plantng the seeds to harvest.
I love growing my own vegetables. I wish I had a larger garden but you can grow a surprisingly large amount in a little space. TIP: After slicing your radishes put them in cold water for 5 minutes and they get super crisp. Easy and delicious curry with salmon. A everyday curry made with ingredients most already have at home.
I have used mild Madras curry powder but if you like it very spicy, use another type. I like this curry best using green vegetables like broccoli, green beans or sugar snaps. Serve with steamed basmati rice. I have made flatbread on the grill a couple of times now and just love them. So yummy. This is the same recipe as the others on my blog but I added 1 tsp baking powder and a little more salt. By doing this they got fluffier but on the other side a little harder to get evenly cooked on one of the sides. If you are not a fan of onion use other vegetables, like bell peppers, tomato or sweet potato instead.
It is raining today and then I mean really pouring down. So what else is there to do than bake a delicious cake.
Sour cream crumb cake is one of my favorites. This is a great potato salad without your normal mayo or yoghurt dressing. I made a coarse walnut pesto instead.
I also grilled the potatoes for a little smoky flavour but that is not necessary. I am always on the look out for the best chocolate chip cookies recipe. I have tried my fair share, some more successfull
than others. These ones are the best cookies so far, specially when I used milk chocolate instead of semi sweet. If you don`t like your cookies too sweet, use dark chocolate istead. |
