This is a great potato salad without your normal mayo or yoghurt dressing. I made a coarse walnut pesto instead.
I also grilled the potatoes for a little smoky flavour but that is not necessary.
Potato salad with walnut pesto
3 servings
1.1 pound baby new potatoes, skin on
salt and pepper
A handfull arugula or baby greens
5 oz (150g) feta cheese, crumbled
Walnut pesto
1/3 cup  olive oil
2 cups fresh basil leaves
3 tbsp parmesan cheese, grated
1 garlic clove
A handfull walnuts, chopped
1-2 tbsp lemon juice
Mix all the ingredients together with in a blender until you get a corse pesto

Boil the potatoes until almost tender. Drain and let them cool for a couple of minutes until you cut them in half.
Leave the skin on. Heat up the grill , brush a little olive oil on the potatoes and grill them until they are
tender and nicely chard. Season with salt.
Place the potatoes in a large serving dish, add salad leaves and stir in the pesto. Crumble over the feta cheese
and serve.
