Chili marinated chicken skewers with homemade flatbread

The barbeque season is upon us and the other day I cleaned and made my Weber gas grill ready.
Then I made adelicious meal with Chili and paprika marinaded chicken filets with homemade yoghurt flatbread, tzatsiki and a simple tomato and feta salad. Homemade flatbread taste awesome and is easy both to make and grill. As I said I use a gas grill, if you use one with charcoals, be aware so the don`t burn. You can also fry them in a fryingpan with a little oil if you like. This recipe/meal is for 3 servings. 
Chili marinaded grilled chicken skewers
4 large chicken filets, without the skin
Marinade:
1 1/2 tbsp canola oil
1 tsp fresh rosemary or oregano, chopped
2 tsp paprika
1/2 tsp dried chili flakes
1 garlic clove, smashed
1/2 lemon, juice
salt and pepper
Whisk all the ingredients together in a small bowl.
Cut the chicken in strips, not to thin. Place them in a large glass dish and pour over the marinade.
Use your fingers and massage the meat to coat all the bits. Cover with plastic wrap and marinate for 1/2 hour.
Soak small wooden skewers in water to keep them from burning on the grill.
Thread the chicken strips onto the skewers and sprinkle with a little salt. Grill them on high heat until cooked through.


Yoghurt flatbread
8 pieces
1 cup plain yoghurt
2-2 1/4 all-purpose flour
2 tbsp fresh herbs(or 2 tsp dry)
1/2 tsp salt
Place all the ingredients in a food processor with a dough hook attatchement.
Knead the dough on a medium- high speed until the dough is soft and elastic.  Let it rest for 15 minutes.
Shape dough into 8 balls and with a rollling pin roll out 8 round thin flatbreads. Layer the pieces between
parcement paper until ready to grill. Brush a little oil on the grill and cook them for a couple of minutes on each side
until cooked and charred. Keep them warm and soft in a kitchen towel. 
 
Tzatsiki
1/2 cucumber, grated
3/4 cup greek yoghurt
1 garlic cloce, mashed
1/2 lemon, zest and juice
salt and pepper to taste
Place the grated cucumber on a plate, sprinkle with a little salt. Let it sit for 15 minutes. 
Squeeze out most the water and place in a bowl with the rest of the ingredients. Mix and season to taste.
