These muffins tastes really good and is quite healthy too.! Applesauce, carrots, nuts and seeds. They don`t have any butter or oil and therefor has less calories than regular carrot muffins. I use homemade applesauce. If you use sweetend applesauce, cut down on the honey. As there is no butter or oil, they stick to regular baking liners. You non stick liners or just spray the tin with a non-stick cooking spray.
This is a super healthy dinner. Fresh salmon with stew of white beans and vegetables. It can sometimes be a challenge to
come up with new ideas for fish dinners. I have some great dishes here on my blog. You can find them in the recipe index/fish. Salmon is my family`s favorite but this stew can also be made with other fish types like halibut or cod. Homemade mango chutney taste very different from store bought ones which has a tendency to be too sweet.
This has sweetness too but is fresh, has acidity and a little kick of chili and spices. Here it is served with fried chicken, salad and warm nan bread, a little sour cream and red onion. Fall can be very beautiful with the colors changing, the woods full of berries and mushrooms. Apples in season and all the delicious root vegetables. Butternut squash is a beautiful vegetable or winter fruit. It is sweet with an earthy flavour and highly decorative as decoration. I like it best when it is oven roasted. It enhanches the sweetness. You can also use the seeds for snack or sprinkle over salads if you roast them first. I have made a simple risotto with the roasted butternut.
This is a taiwanese dish with ground pork and noodles. Ground pork is leaner than beef and often cheaper as well.
It is an easy and quick dish to make and the meat sauce is full of flavour. I cook a lot of asian food but mostly chinese, thai and vietnamese. So it was time to try out something new. Some time ago I was invited by the korean embassy to try and learn about korean food. It was a fun experience and I had some really tasty food. After the meet I made some korean dishes at home, you can see them here (in norwegian). I got inspired so this time I made a taiwanese style dish. The meatsauce is as I said very flavorful but is supposed to be quite dry. I woulld recommend to cook the nodles in salted water, gives more flavour. A little char on the broccoli is fine. Fall is apple season and there are so many tasty varities. You can bake cakes, pies, galettes or make applesauce and apple jelly. I started the apple season by making these mini apple and salted caramel galettes. Homemade caramel is the best! I almost ate it all before it made it to the galettes. I do recommend you to make caramel yourself, not at all difficult. With this recipe you can also make one large galette, just remember to bake it for 45-50 minutes.
Fall is when carrots and other root vegetables is at their best. I planted carrots months ago and finaly yesterday I harvested the first ones from my little kitchen garden. Oven roasting brings out the sweetness of the carrots. I made sweet and tangy maple glaze to go with it. Seasame seeds and fresh cilantro. You can also check out some of my other carrot side dishes. Fall is rapidly taken over and what is better than a comforting soup for dinner when it is getting colder out. I make quite a lot of soup and stews in the fall, with in season root vegetables. This soup is super easy to make, takes about half an hour and have vegetabels and beans. I would recommend you to use kale, it`s vibrant in color and good for you. My problem is that I really don`t like kale, so I used napa cabbage instead. I first posted this recipe back in 2011, with horrible photos. Now it`s remade with new photos. I will post an old photo in the post for you to see the difference.
I have learned a lot from food photography and styling over the last four years. Whenever I want to make something quick and easy for dinner I tend to make spaghetti carbonara. Usually I use dried
pasta but this time I used the fresh egg pasta I had lying in the fridge. I do think dried pasta is better for this dish because dried pasta does not absorbe the sauce as much. This dish is one of the first I published on my blog 4 years ago. The photos was not all that good back then so I did a little remake. |
