A nice chuncky salsa with apples and tomatoes. Goes well with grilled food
Chunky salsa with tomato and apple
4 persons
2 green apples ( I prefer Granny Smith)
A handfull of fresh basil leaves
4 ripe medium tomatoes, chopped
1/2 red onion, finely chopped
1/2 lemon (juice)
2 tbsp white wine vinegar
4 tbsp olive oil
Salt and pepper
Core and finely dice the unpeeled apples. Use sour apples (like Granny Smith) for this dish, it gets to sweet otherwise. Mix apples with the chopped basil leaves, the tomatoes and finely chopped red onion. Squeeze over the lemon juice.
In another small bowl whisk the olive oil and vinegar together with salt and pepper. I use flakes like Maldon salt. Drizzle over the dressing and mix well. Let it sit for a while before servering.
