My daughter is off to university again and with all those long and hard lectures she is always looking for healthy snacks to bring with her. These energybar cookies is super healthy. I made a batch for her today. Remember to let the batter rest for 10 minutes, it will help them not to fall apart. Salt is also important, if you leave that out they will lack flavour.
Healthy energy bars
16 cookies
4.5 oz rolled oats
1 tbsp all-purose flour
1/4 cup raisins
1/2 tsp salt
1.4 oz sesame seeds
1.4 oz pumpkin seeds
1.7 oz sunflower seeds
1.7 oz almond slivers
1 tsp cinnamon
5 tsp olive oil
2.1 oz honey
1 egg
1/2 cup + 2tbsp water
Sea salt flakes for garnish
2-3 tbsp honey for garnish
Preheat oven to 350 F. Cover two bakingtrays with parcement paper.
Stir the dry ingredients together in a baking bowl. Whisk the wet ingredients in another bowl.
Add wet to dry and mix well. Let the bowl rest for 10 minutes in room temperature to swell. Use a large
tablespoon and form 16 flat round cookies. Sprinkle with a little sea salt flakes and drizzle over the honey.
Bake for 12-15 minutes until golden. Let them cool on the bakingsheet for 5 minutes and then transfer to a cooling rack.
