Whole roasted chicken is one of my favorite dinners. Roasted on a bed of lemon and garlic and filled with herb butter is a dreamy combo. Very flavorsome chicken with a flavorsome jus. You can serve almost any side dish with this chicken, I served up some stirfried greens, rice and quinoa.

A lovely summer salad using baby new potatoes, ripe peaches and fragrant fresh basil. Taste great with your barbeque meat or fish. The sugar snaps and tomatoes is from my own garden, I love when I can use my homegrown veggies.

Happy new year!
2017, new year new possibilities. I had a eating frenzy over the holidays with lots of delicious food and baked goods.
For a lighter meal I made this butternut mash with roasted turkey breast. The mash also goes well with
chicken. It is great side dish. I really like butternut squash, specially oven roasted.

Curry spiced chicken and kale
I have decided to use everything in my fridge and freezer before buying more food. There is always something that never get used and after a while get trown out. Last nights dinner was made with chicken legs, kale, leek, zucchini and an orange.  Braised with stock and indian curry spices. Kale is not an easy vegetable to work with specially as I don`t like the taste that much. I went online and found a recipe for crispy baked kale that sounded very interesting and turned out quite nice.

Eggplant thai curry
I was in the mood for a vegetarian curry and wanted to use sweet potato and eggplant. Found these cute mini eggplants in my store and grabbed a sweet potato without knowing it had white flesh instead of orange. In fact I did not know there were more than one type of sweet potato. The white one is not as sweet and has a drier consistency than the orange one, but it taste quite sweet and was great in this curry.

Plum chutney
I had leftover plums in the house and as I don`t like to trow away perfectly fine food I made this sweet and tangy plum chutney with warm spices. Plum chutney goes very well with pork,so todays dinner will be this tasty chutney, pork chops and mash. The recipe is adapted from Jamie Oliver. I made a small portion but you can double the recipe if you like.

It is not always easy to bake cakes without gluten, the result vary to say the least. So I think muffins is the best way to go, they never fail me. This is a fall version with apples, sugar and cinnamon.  The muffin recipe is a great basic one to use for other flavours as well, like chocolate, berries or why not citrus.

Beef in oystersauce
This is one of my go to dinners. Stir frying is easy and can be varied with different types of meat and vegetables. 
You can buy ready made sauces but it`s not that hard to make your own. With a little garlic, ginger and chili you are half way there. You should also have some asian sauces in your pantry, to start buy some  soy sauce, oyster sauce, teriyaki and sesame oil. Then you are set to make great stir fry dinners.
