Radish salad with mandarin vinaigrette

This year I grew my own radishes which was very easy to do. It took about 5 weeks from plantng the seeds to harvest.
I love growing my own vegetables. I wish I had a larger garden but you can grow a surprisingly large amount in a little space. TIP: After slicing your radishes put them in cold water for 5 minutes and they get super crisp.

Radish salad with mandarin vinaigrette
4 servings
1 bunch radishes (about 15 medium sized)
2 tbsp olive oil
2 tbsp freshly squeezed mandarin juice (1-2 large ones)
1 tbsp apple cider vinegar
1 tsp grated mandarin zest
salt and pepper

Wash the radishes and cut of the green part. Use a mandolin or a sharp knife and cut very thin slices.
Place them in a bowl with ice cold water for 5 minutes. Drain on a kitchen paper towel.
Make the vinaigrette by whisking together all the ingredients. Place the sliced radishes in a serving dish, 
pour over the vinaigrette. Let it sit to infuse for about 10 minutes or until you have made the rest of the meal.
