Glutenfree apple muffins
It is not always easy to bake cakes without gluten, the result vary to say the least. So I think muffins is the best way to go, they never fail me. This is a fall version with apples, sugar and cinnamon.  The muffin recipe is a great basic one to use for other flavours as well, like chocolate, berries or why not citrus.

​Gluten free apple muffins
8 muffins
1 cup glutenfree all-purpose flour
1 egg
1/2 cup granulated sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup plain yoghurt
1/3 cup oil (rapseed/sunflower)
1 tsp vanilla extract
1 apple
2 tbsp sugar
1 tsp ground cinnamon

- Preheat oven 390 F and line a muffin tray with paper cases.
- Peel and thinly slice the apple. Dip each slice into the mix of 2 tbsp sugar and 1 tsp cinnamon. Set aside.
- Sift together the flour, baking powder and salt.
- Whisk sugar and egg slighly before adding the oil and yoghurt.
- Add egg mixture to the dry ingredienst and stir to just combined.
- Spoon into the muffin tins, about half full.
- Gently press down a couple of slices of apple into each muffin and sprinkle on the left over cinnamon/sugar.
- Bake for 17-20 minutes, until a skewer inserted in the centre comes out clean. 
- Let the muffins cool about 10 minutes in the pan before moving them to a wire rack.
