This is one of my go to dinners. Stir frying is easy and can be varied with different types of meat and vegetables.
You can buy ready made sauces but it`s not that hard to make your own. With a little garlic, ginger and chili you are half way there. You should also have some asian sauces in your pantry, to start buy some soy sauce, oyster sauce, teriyaki and sesame oil. Then you are set to make great stir fry dinners.

Tips;
- I like using peanut oil for stir frying because it tolerate high heat quite well.
Don`t use olive oil, it burns easily.
- You can use most type of noodles but my favorite is eggnoodles.
- This stir fry does not have a lot of sauce but tons of flavour.
- Always stir fry on high heat.
- Do your mis en place ready before cooking.

Beef in oystersauce
2 servings
9-10oz sirloin steak
1/3 cup soy sauce
2 tsp chinese rice wine ( or dry sherry)
2 tsp sesame oil
1/2 red chilipepper, desseded
2 garlic cloves
1 tsp fresh grated ginger
4 spring onion
2 carrots
1/2 head of broccoli
10 sugar snap peas
1/3 cup oystersauce
Eggnoodles for 2 serving
- Cut the beef into 1/4-inch thick strips.
- Marinate with sesame oil, soy sauce and rice wine for 10 minutes in room temperature.
- Dice broccoli and celery and cut carrots into stripes.
- Smash garlic, thinly slice onion and chili and grate the ginger.
- Heat 1 tbsp oil in a wok pan on high heat, add the beef in two batches and cook for 1 minute until browned.
Keep the left over marinade. Set aside.
- Cook the noodles after the packet instructions.
- Add 1 tsp oil to the wok and sautee garlic, chili, ginger and onion for a minute.
- Add vegetables, 2-3 tbsp water and stir fry for a couple of minutes.
- Add beef, leftover marinade and oyster sauce, fry another couple of minutes then add the noodles and stir to combine.
- Sprinkle over the chopped spring onion.
