This is one of the best dessert I have eaten in a long while. Tropical very fragrant pineapple and passionfruit, vanilla and topped with merengue. The recipe is from Donna Hay magazine. Unfornutnately the photos we took did was not all that succesfull and do not show the great flavours. I dont really know if it was the styling, the light or just a bad photo day.
Tropical dessert with meringue, pineapple and passionfruit
4-5 servings
1 large fresh pineapple
3 passion fruits
1 lime, juice
1 vanilla bean
Meringue:
4 eggwhites, at room temperature
1 cup castersugar
1 ts white wine vinegar
Preheat oven to 300 F.
Make the meringue by whisking the eggwhites to stiff peaks in a kitchen aid or with a handmixer
on high speed. Gradually add sugar, 1 tbsp at the time, waiting 15 seconds before adding the next.
Once all sugar is added whisk for another 2-3 minutes. Then add vinegar and mix further 1 minute.
Cut and core the pineapple in small triangles. Add passionfruit pulp and lime juice. Halved the vanilla bean
and scrape out the seeds. Mix everything well together avd place in a ovenproof dish, about 10 X 10 inch.
Use a large spoon and spoon the merengue over the fruit. Make sure all of the filling is covered.
Bake for 1 hour. Allow to cool for 10 minutes. Dust with icing sugar and serve.
