I use this tomato sauce as a base for a number of dishes. Ir is also delicious on it´s own.
Some likes the tomato sauce without larger pieces of tomato and onion. For them you can use
a blender to get a smother texture. Remember to add the herbs after.
Tomato sauce
4 servings (for pasta)
2 tbsp olive oil
1 medium onion,finely chopped
3 garlic cloves, finely chopped
2 cans (14 oz each) chopped tomatoes
1-2 tsp granulated sugar
1 tsp dried chiliflakes (or 1 fresh chili)
1 tsp concentrated chicken or vegetable stock
Handfull basil leaves
1 tbsp fresh oregano, chopped
Salt and pepper

Heat the olive oil in la large saucepan. Add onion and garlic and cook on medium heat until translucent and soft,
a couple of minutes. Add tomatoes, sugar, stock and chiliflakes. Let the sauce cook on low heatwith the lid on
for 20 minutes. Season with salt and pepper.
Tear the basil leaves and add to the tomato sauce with the chopped  oregano. Serve
