Texas sheet cake is so yummy with warm frosting poured over the cake. As usual we ate a lot of the frosting before it even got on to the cake. Thank god I made extra!
Texas sheet cake
2 cups all-purpose flour
2 cups sugar
¼ tsp salt
4 heaping Tbsp unsweetened baking cocoa
2 sticks butter
1 cup boiling water
½ cup buttermilk
2 large eggs, beaten
1 tsp baking soda
1 tsp vanilla extract
FROSTING
1 3/4 sticks butter
4 heaping Tbsp unsweetened cocoa
6 Tbsp milk
1 tsp vanilla extract
3 - 3 1/4 cups icing sugar
Preheat oven to 350 F.
In a large mixing bowl, combine flour, sugar, and salt.
Melt butter in a saucepan and add the cocoa. Stir and add boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir to cool some. Whisk together buttermilk and eggs, baking soda, and the vanilla extract. Pour buttermilk mixture into chocolatebutter mixture. Pour into 13 x 18″ sheet cake pan and bake for 20 minutes. After 10 minutes of bakingtime, make the frosting. Melt butter in a saucepan. Add the cocoa and stir to combine. Turn off the heat. Add milk, vanilla, and powdered sugar. Stir together. Pour frosting carefulley over the warm cake and spread it all over the cake. Use a spatula to keep all the frosting ending up on the edges.
Let the cake cool down and the froting set before cutting in squares. It will take about 1-2 hours.
