Roasted califllower and chickpea salad with dressing served with fried fish. Healthy and tasty. Use whatever fresh herbs you like. I have planted a little herb garden.

Spiced cauliflower and garbanzo bean salad
2-3 servings
1 small cauliflower, broken into florets
3 tbsp olive oil
2 garlic cloves
1 heaped tsp ground cumin
1/2 tsp ground coriander
salt and pepper
1 can (16 oz) Garbanzo beans (chickpeas)
8 oz arugula or baby spinach
2 oz pine nuts
Preheat oven to 395 F.
Put cauliflower florets in a ovenproof dish.
Whisk together 2 tbsp olive oil, finely chopped garlic, coriander, cumin, salt and peppe and add to the cauliflower. Stir to coat and bake in the oven for about 10 minutes.
Rinse the garbancho beans. Add beans, pine nuts and 1 tbsp of olive oil to the cauliflower mixture and bake for another 10 minutes until cauliflower is cooked through.
Just before serving pour over dressing and the chopped herbs. Serve with fried fish.
Dressing
3 tbsp olive oil
1 1/2 tbsp lime juice
1/2 tsp paprika
1 tsp honey
2 tbsp fresh basil, chopped
1 tbsp parsley, chopped
