Important to get the right consistency on the batter so that they do not get too dense and chewy.
You can fill them with almost everything, bacon is a great choice for flavor.

Snack muffins with bacon and cheese
1 1/2 cup all purpose flour
1/2 cup whole wheat flour
4 tbsp butter, melted
2 tsp baking powder
1 tsp salt
1 cup milk
1 egg
3 tbsp plain yoghurt
6 oz bacon
6 oz grated cheddar cheese
2 tbsp chive
a handfull grated parmesan
Preheat oven 400 F
Grease a non-stick muffins tray. No need for paper cups.
Dice the bacon and cook in a frying pan until crisp. Put on a kitchen paper towel to degrease.
Melt the butter in a little saucepan.
In a large mixing bowl add flour, salt and baking powder. Then add grated cheddar and bacon. Mix.
In another mixing bowl pour in milk, eggs and yoghurt. Whisk together.
Add the wet ingrediens and melted butter to the flour mixture and mix with a wooden spoon into a thick batter. Do not overmix.
Spoon the batter into the muffins tin, each 3/4 full. Sprinkle some parmesan on top.
Bake for 17-20 min until light golden. Cool on a wire rack.
