My daughters favorite christmas cookies.
Raspberry filled cookies
Makes about 40 cookies
1 1/3 cup all-purpose flour
3/4 cup + 1 tbsp butter, cold and cut in dices
2/3 cup potato flour
1/2 cup Confectioner's sugar
1/4 cup sugar

ca 1/2 cup raspberry jam

Preheat oven to 400 F
Add all ingredients in a foodprosessor with a knive attachement. 
Process on high speed until mixtures becomes a soft dough.
Roll dough into two thin long rolls and cut each roll in 20 pieces.
Roll each piece into a ball and put on baking sheet with parcement paper.
Press down with your thumb to make a small well in the center of the cookie. 
Fill with 1/2 teaspoon of raspberry jam.
Bake for about 10 minutes until a little golden. let cool on a wire rack.
Keep them in a cookie jar.
