Potato and spinach stew

This potato stew is a tasty dish to serve with your meat or chicken.  It has a  little italian flair to it.
Fresh spinach together with a tomato sauce and potatoes is a great comnination. If you have small new potatoes use those instead. Don`t peel them, just wash.
Potato and spinach stew
3 servings
18 oz potatoes, peeled and diced
1 onion, chopped
2 garlic cloves, finely chopped
1 chili, deeseeded and finely chopped
1 tbsp olive oil
1 can (14 oz) good quality chopped plum tomatoes
1/3 cup vegetable stock
7 oz fresh spinach leaves
2 tbsp chopped parsely
Salt and pepper 

Boil the potatoes for about 8 minutes. They will still be a little hard.Drain.
Heat up a saucepan on medium high heat, add oil, onion, garlic and chili.
Sweat for a couple of minutes until translucent. Add the potatoes, stir and let cook for 2 minutes.
Then pour in the stock and tomatoes. Cook on low heat without the lid until the potatoes are cooked through.
Season with salt and pepper.  The sauce will be quite thick.
Add the spinach leaves, stir. They will soften fast. When soft sprinkle over some parsley and serve.
