I am still in grilling mode even if the weather has changed a little during the last week. This rub has a nice smokiness to it. I made kabobs and served it with sauteed zucchini.
2 pounds pork tenderloin
Spice rub
1 1/2 tsp freshly ground pepper
1 1/2 tsp cumin
1 1/2 tsp dried oregano
1 1/2 tsp dried thyme
1 1/2 tsp paprika
1/2 tsp smoked paprika
1/2 tsp chili powder or dried chiliflakes
1 - 1 1/2 tsp salt
Whisk all the ingredients minus the salt together. Carefully rub the mix onto the pork tenderloins.
Let them marinate in the fridge for 2-4 hours. Remove from fridge 20-30 minutes before grilling.
Just before you put the meat on the grill season with salt.
