This is a great everyday meal. I have used ready made satay sauce (peanut sauce). I often find that store bought one
is just as good as the ones I make myself. No use waisting time during those busy weekday meals.
I made the rice with coconut milk making it creamier and richer. I love that coconut taste. I often use ground pork
in asian dishes as I find it to be milder in taste. Veggies is important too so make sure you use lots of bright colores greens.

Asian pork meatballs
2 servings
1 lb pork mince
1 tbsp say sauce
2 garlic cloves, minced
1 tsp grated ginger
1 tsp ground coriander
1/2 red chili, deseeded and chopped
2 tbsp water
2 spring onion, finely chopped
- Mix all the ingredients together
- Roll out small meatballs (walnutsize)
- Heat 2 tbsp of oil in a large frying pan and cook the meatballs until cooked through and golden.
Coconut rice
2 servings
3/4 cup jasmine rice
3/4 cup water
3/4 cup coconut milk (full fat)
1 ts salt
Toasted coconut flakes to serve
- Bring water, coconut milk and salt to the boil in a medium size saucepan.
- Add jasmine rice and stir. Lower the heat and put on the lid. Let the rice cook for 15 minutes.
- Remove from heat, leave the lid on and lte the rice sit for another 10 minutes wwhile you prepare the rest of the meal.
- Use a fork to fluff the rice.

Pork mince is leaner then beef mince and often cheaper as well.
