For a while I have promised my daughter to make her Lasagna. Finally I got around to it just to disvover I was out of
lasagna pasta sheets. Disaster! Had to improvise and made it with penne pasta instead. It takes a while to make lasagna from scratch but I promise you it is so worth it.

Penne lasagna
4 servings
Meat sauce
14 oz ground beef
3 tbsp olive oil
a knob of butter
1 onion
1/2 red bell pepper, finely chopped
1 1/2 (21 oz) can crushed tomatoes
1 tsp sugar
2 large garlic cloves, finely chopped
1/2 tsp dried chili flakes or 1 fresh chili
1 tsp paprika
1 tbsp ketchup
1 tsp concentrated beef stock
1 tsp dried oregano
Salt and pepper
A handfull fresh basil leaves
Heat a fryingpan to medium heat, add 2 tbsp olive oil. Add onion, garlic and chili.
Saute until soft and translucent. Pour the onion into a large saucepan over medium-low heat.
Add crushed tomatoes and sugar. Let cook while you fry the meat.
Heat up the frying pan to high heat, add 1 tbsp olive oil and a knob of butter. Add the ground meat and
break it down with a fork. Fry until it colors and add salt and pepper and some kind of grill spices,
and paprika. Fry for a minute or so and pour the meat into the sauepan with the tomatoes.
Pour 1/4 cup hot water in the frying pan to get all the leftover juices from the meat, and add to the saucepan.
Add oregnao and stock. Lower the heat to low and put the lid on. Cook for about 20-30 minutes.
Season to taste with salt and pepper and add the basil leaves.

14 oz penne pasta
Cook the pasta according to package instructions, until al dente in plenty of salted water.
Drain well and sprinkle with a little olive oil.
Sauce
1 1/2 tbsp butter
2 tbsp all-purpose flour
1 2/3 cup milk
1 tsp salt
10 ounces grated cheese
White ground pepper
Melt butter in a medium saucepan over medium-high heat. Add flour, whisk for a minute until combined.
Slowly add milk, whisking constantly, until mixture is smooth. Let cook for 5 minute
Remove from heat and stir in half of the grated cheese, salt and white pepper.
Preheat oven to 400 F
In a large ovenproof dish alternate the meat sauce, penne pasta and cheesesauce in layers.
Starting with meat sauce and ending with cheese sauce. Sprinkle the rest if the grated cheese on top.
Bake in the oven for about 15 minutes until the cheese is melted and golden.
Serve with a side salad and/or a garlic baguette.
