Peanut butter fudge
About 30 pieces
5 oz unsalted butter
2/3 cup smooth peanut butter
Pinch of salt
1½ tsp vanilla extract
2 1/4 cups icing sugar, sifted
Butter an small non-stick baking dish.
In a medium saucepan over medium heat, heat the butter and peanut butter until it starts to boil.
Remove from the heat. Add vanilla and pinch of salt.
Stir in the sifted icing sugar until its smooth with no lumps.
Pour the fudge mixture into the prepared dish and smooth the top.
Press a piece of plastic wrap directly on the fudge and let it set in roomtemperature for 30 minutes, then transfer to
the refrigerator until completly set, at least 1 hour.
Cut into squares.
You can store the fudge in the refrigerator but take them out a little while before serving.
