Parmesan crusted cod

Another great fish dinner.  I like to try different recipes to vary , but in all honesty, I am not very good at using all the great fish types out there.   Mostly cod and salmon.  Its a pity because I have a great fishmonger not very far from my house.  Well, maybe it will be one of my many new years resolutions.........
Parmesan crusted cod
2 servings
1.3 Ib fillet of cod or other firm white fish
2 eggs
1/2 cup grated parmesan cheese
1 1/2 tsp salt
1/4 tsp pepper
2 tbsp butter

1.7 Ib boiled potatoes
10 oz peas

Red bell pepper sauce
2 large red bell peppers, seeded, cut in small dice
2 tbsp butter
3/4 cup water
2 tbsp concentrated vegetable stock
White pepper

Melt butter in a small saucepan and add the diced bell peppers. Cook on medium high heat for about 5 min.
Add water, stock and pepper and cook further 5 min, without a lid.
Use a handblender and mix the sauce smooth. Season with salt and pepper if necessary.

Whisk together eggs and parmesan cheese in a small bowl. Dip the fish fillets in the egg mixture.
Heat a frying pan to medium to high heat and fry the fish until it flakes easily and the topping is crisp.
About 2-3 min on each side.

Serve the fish with red bell pepper sauce, peas and boiled potatoes.
