Panko crusted cod

I served the fish with a little vegatable stew made with a little stock and butter. I added boiled potatoes, fennel, 
sugar snaps, onion and carrot. Panko is japanese dried bread crumbs.  
Panko crusted cod
4 servings
4 cod fillets 6 oz a piece
1/2 cup panko bread crumbs
1-2 tbsp oil
1 garlic clove
1 lemon, zest
1 tbsp fresh thyme, chopped
Sea salt and pepper

Heat the oven to 350 F
Fry the panko bread crumbs in oil until crisp and golden. Stir constantly. It burns fast.
Add the lemon zest, crushed garlic, thyme, salt and pepper.
Put the fish fillets in an ovenproof dish. Evenly distribute panko crust onto the fish.
Bake for about 15 minutes until it flakes easily.
Baking time varies due to the thickness of the fillets.
