This is a great and easy lunch dish to serve to your family and friends at easter time.
Eggs is a part of the easter tradition and not just the chocolate ones.
This recipe is for 4 servings but today I made it for two, halved the recipe (used 4 eggs) and baked it in a round dish.
You can use any vegetable you like, not just onion as I did. The frittata was really puffed when it came out of the oven. I did my photography outdoors in the cold today and the frittata unfortunately did not stay puffed for very long. I should have thought of that.... But still it tasted great and I served it with freshly baked bread and butter.

Onion and feta frittata
4 servings
1 tbsp butter
2 onion, sliced thin
7 oz feta cheese, crumbled
1 1/4 cup single cream
7 eggs
4 spring onion
Fresh parsley
Sea salt and black pepper
Preheat oven to 400 F
Heat butter in a frying pan, add onion and cook for 5 minutes on medium-high heat until softened.
Place onion and 5oz crumbled feta in a lightly greased baking dish (about 11x7 inch).
Whisk together eggs and cream. Season with salt and pepper. Remember that feta cheese is quite salty.
Pour egg mixture on top of the onion and feta and bake in the oven for about 20-30 minutes until puffed and golden. Sprinkle over some extra feta, chopped spring onion and parsley. Serve with bread and butter.
