My daughter loves oatmeal. That is a good thing because oat are healthy and good for you. But we need variation, so for todays breakfast we made oatmeal pancakes. Served with sliced banana, a hint of cinnamon and some berries.
Oatmeal pancakes
About 10 pancakes
3/4 cup quick oats
1 cup milk
1 large egg
1/8 cup canola oil
1/2 cup All purpose whole wheat flour
1 tbsp brown sugar
1 tsp baking powder
1/2 tsp salt
1/2 tbsp butter
Mix oats and milk in small bowl. Set aside for 10 minutes.
Add eggs and oil, in a separate large bowl and mix well. Add remaining ingredients and mix until smooth.
Add oat mixture to flour mixture all at once, mixing until smooth.
Melt butter over medium heat in large skillet. Drop in batter by 1/4 cupfuls. Cook until bubbles appear on surface. Turn and cook other side until golden. Serve hot with banana, cinnamon and berries.
