Oat is good for you and taste good. I use oat a lot when I make bread and cakes. Oat gives a moist texture and has a distinct flavour. It is very versitale. Today I made a moist oat cake with berries, blueberry, blackberry , cranberry and some raspberries. I wanted to use fresh berries but my local store was out so I got frozen instead. A little tip when using frozen berries in cakes, don`t thaw the berries before using. They will color the whole cake . I also sprinkle over some flour before I add them to the batter. And you will need to bake the cake a couple of minutes more.
Oat cake with berries
1 stick butter, softened
3/4 cup all purpose flour
1 cup + 3 tbsp quick cooking oats
2/3 cup water
1/2 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1/2 tsp ground cinnamon
1/2 cup granulated sugar
1/2 cup light brown sugar
1 large egg
1 tsp vanilla extract
2 cup mixed berries (frozen, not thawed or fresh), blueberries and blackberries
3 tbsp sugar (or sanding sugar)
Preheat oven to 350 F Butter and flour a 8 inch square pan.
Combine 1 cup of oats and the water in a bowl and let stand about 5 min until soft.
In another bowl whisk together flour, salt, cinnamon, baking soda and bakingpowder.
Cream together butter and both sugars with a hand mixer or a foodprocessor with paddle attatchments until light and fluffy. Add the egg and vanilla and mix well. Add bothe flour and oat mixtures and beat on low speed until just incorporated. Fold in half the berries.
Scatter remaining berries over the top and sprinkle 3 tbsp oats and sugar.
Bake for 40-45 min. Let cool on a wire rack for at least 30 minutes before you cut into squares.
