I just love to bake muffins. These ones has a filling of Nutella.
Nutella muffins
12 muffins
2.6 oz butter, at room temperature
1/4 cup canola oil
1/2 cup granulated sugar
1/2 cup light brown sugar
2 large eggs
1 tsp. vanilla
2 cup all purpose flour
2 tsp. baking powder
1/4 tsp. salt
3/4 cup milk
1/3 cup Nutella
Preheat oven to 350F. Line a muffins tin with 12 paper liners.
Cream butter, oil and sugars with an electric mixer until light and fluffy. Add the eggs, on at the time
and beat until smooth. Then add vanilla. In another bowl, whisk together flour, baking powder and salt. Add half to the butter mixture and beat on low speed just until combined. Add inn the milk and and then the remaining flour mixture and beat until just combined. Spoon the batter into the liners, 3/4 full. Microwave the Nutella for 20 seconds until soft. Add a spoonful of Nutella on top of each muffins, and swirl using a bamboo skewer or a knife. Be quick or the Nutella hardens. Bake for 18-20 minutes until done. Let them cool on a wire rack.
