Noodle stir fry with ground beef

A tasty dish with chinese flavours. As I have said before, chinese cuisine is one of my favorite. I love the spices and sauces. I am always trying to find new chinese dishes to serve to my family for dinner. Sometimes a little to often for their taste..  Do not use too lean beef mince, it will get to dry.
Noodle stir fry with ground beef
3 servings
100 g medium or thin rice noodles
A splash of white wine vinegar
1 tsp sunflower oil
2 garlic cloves, finely chopped
14 oz grounded beef (mince)
2 tsp fresh grated fresh ginger
4 tbsp rice wine or dry sherry
8 oz broccoli, in floretts
3.5 oz sugar snap peas, thinly sliced
1 lime, juice
1.5 oz salted cahew nuts, chopped
1 red chili, sliced
Cilantro or parsley, chopped

1/6 cup Hoisin sauce
2 tbsp honey
1 1/2 tbsp dry sherry
1/2 tsp five spice powder

Soak the noodles in boiling water with a splash of vinegar, cover og set aside for 5-10 min or according to the packet instruction. Drain and rinse with warm water. Set aside.
Heat oil in a large frying pan or wok on high heat. Fry beef, garlic and ginger, breaking up the beef mince for about 3-4 minutes until beef is browned. In a small jar whisk together hoisin, honey, sherry and five spice.
Add rice wine/sherry and the hoisin mixture to the beef. Let it cook for abot 1 minute. Add broccoli and lime juice and cook for another couple of minutes. Divide the noodles between 3 plates and topp with beef mixture. Sprinkle over the sugar snaps, cashew, chili and cilantro. Serve
