This mueslibread is very easy to make, stir ingrediens together and pour into a loaf pan.
I use lingonberry jam but I think cranberry sauce or dried chopped cranberries would work well too.
Muesli loaf
1 loaf
3/4 cup all fashion or quick oats
2 cups all-purpose flour
1/3 cup hazelnuts, chopped
1/3 cup raisins
1/3 cup dried apricots, chopped
1/3 cup flaxseeds
1 tsp salt
1 tsp baking soda
2 cups plain yoghurt
1/8 cup honey
1/4 cup lingonberry jam (or dried chopped cranberries)
Preheat oven to 375 F. Butter a 8 1/2" x 4 1/2" loaf pan.
Whisk together all the dry ingredients. Pour in yoghurt, jam and honey and stir until you get a thick batter.
Spoon the batter evenly into the loaf pan.  Bake for 50-55 minutes.
Let the bread sit in the pan for 10 minutes before you  turn it out of the pan onto a wire rack to cool.
