I always gets hungry somewhere between lunch and dinner. A muesli bar is a good way to go. You can use whatever nuts, sees and dried fruit you want in these bars. I used sultanas, figs, cranberries, abricots, sunflower seeds, pumpkin seeds, hazelnuts and almonds.
Muesli bars
10 pieces
1 3/4 cups rolled oats
1/2 cup oat flour (finely ground oats)
2 1/2 cups mixed nuts, seeds and dried fruits
1/2 cup shredded coconut
2 tbsp ground flax seeds
1/4 cup honey
2 tbsp maple syrup (or honey)
2 tbsp peanut butter
2 tbsp butter
8x8 inch baking pan, lined with plastic wrap.
Ground oat into flour in a foodprocessor or grinder. Mix together all the dry ingredients in a baking bowl.
Melt the butter and peanut butter in the microwave or in a small saucepan, then add the honey and maple syrup. Mix the wet into the dry ingredients and stir until combined. Pour the mixture into the lined baking pan and push down gently. Cover the mixture with a sheet of wax paper and put something heavy on top. Press down as hard as you can. Refrigerate for at least 2 hours, with the heavy object on top. Then cut into 8-10 pieces and wrap each bar in plastic wrap and store in the fridge.
