Sweet cherries is in season and they are so good. I almost ate the whole bag that I bought, I was only going to taste a couple before I started to bake. Fortunatley I ended up with enough to make mini cherry loafs. Ate a couple of those too, really tasty with the cherries. I used mini paper baking tins but you can use one large bread tin if you don`t have small ones.
Mini cherry loafs/pound cake
10 small ones or one large
7 oz soft butter
7 oz all-purpose flour
1 tsp vanilla extract
7 oz granulated sugar
3 large eggs
1 tsp baking powder
1/4 tsp salt
1 fl oz sour cream
About 20 sweet cherries
Preheat oven to 325 F. Grease a loaf tin with butter and dust with flour.
Using a hand held whisk or a kitchen aid with paddle attachment beat butter and sugaruntil light and fluffy. Add the eggs, one at the time. Beat well after each egg.Then add vanilla.
Sift flour, baking powder and salt together and add to the egg mixture in two batches.Add the sour cream. Remove the pits and roughly chop the cherries. Add to the cake batter and mix carefulley. Pour batter into the tins. Bake for 35-40 min until sponge is firm and a inserted skewer comes out clean. Mix together icing sugar with a little milk, then add food coloring (I used purple)
until you get a nice color. Frost the cakes and decorate with whole cherries.
