My daughter bought this cute mini bundt cake pan for me in Los Angeles. I made mini apple bundt cakes with two different frostings to choose from. Caramel frosting or maple glaze. In this photo I used caramel frosting.

Mini apple bundt cakes
6 mini cakes
1 1/4 cup (300ml) all-purpose flour
1 1/2 ts cinnamon
1 tsp baking powder
1/4 tsp baking soda
1 stick (115g) salted butter, melted
3/4 cup brown sugar
2 eggs
1/4 cup buttermilk or sour cream
2 apples
- Preheat oven to 350 F (175C). Spray a mini bundt cake pan with cooking spray.
- Peel and finely dice the apples.
- Melt butter in a small saucepan and let it cool for 5 minutes.
- Whisk flour, cinnamon, baking powder and baking soda in a baking bowl.
- Lightly whisk melted butter, eggs, brown sugar and buttermilk in another bowl.
- Add wet to dry ingredients and stir to combine. Add diced apples.
- Spoon batter into the pan, I find it easier to use a piping bag.
- Bake for 25-30 minutes or until a toothpick inserted into the middle of a cake comes out clean.

Caramel frosting
1/2 cup light brown sugar
1/2 stick butter
3 tbsp milk
1 tsp vanilla extract
1 cup icing sugar
- Bring sugar, butter and milk to boil in a small saucepan over medium-high heat.
When it starts to boil, remove from the heat.
- Add vanilla and let the sauce rest for 10 minutes.
- Stir in the icing sugar until you get a thick consistency.
- Decorate the cake and sprinkle over chopped walnuts.

2 tbsp milk
1 tbsp maple syrup
- whisk together and pour over the mini cakes
