Meat and potato hash

Time to use all the leftovers. I went through my freezer and found  a lot of leftover meat and
sausages. Then I made hash/stew. You can use almost any leftover meat or chicken for this dish.
I use 2 large potatoes and 1/2 onion pr serving in addition to the meat.
I also fry up an egg to put on top. 
Cut potatoes and meat in small dices, finely chop the onion.
Boil potatoes in salted water until soft. Drain.
Fry the onion in a frying pan until soft and succulent. Set aside.
Fry the potatoes until golden, add onion and meat and fry for about 5 minutes. Season with salt and pepper.
In another fryingpan make the eggs the way you like it.
Divide hash on serving plates, sprinkle some parsley or sping onion and put the egg on top.
Voila!

Tip
You can add some single cream to make a creamier version or some dried chiliflakes for more heat.
