I do not like to eat too heavy and large meals in the summer and that`s why a salad is so perfect. I love ceasar salad, specially the romain salad leaves. Crisp with a slightly bitter taste.
I wanted to try a different approache today so I made a creamy creme fraiche dressing, then I added a soft boiled egg, some crisp bacon, some toast and grated parmesan cheese. Yum Yum Yum

Lunch salad
1/4 Romain salad, cut in 4 lengthwise
2 oz bacon, crisp in little pieces
2 toast with whole wheat bread
1 softboiled egg
Grated parmesan
Creme fraiche dressing
1/2 cup creme fraiche or greek yoghurt
5 tsp freshly squeezed lemon juice
1/4 tsp finely grated lemon zest
1/4 tsp coarse seasalt
1/4 tsp freshly ground black pepper
In a small bowl, whisk together creme fraiche, lemon juice, lemon zest, salt and pepper.
