Love a slice of cake with my evening tea but with the bikini season just around the corner
I had to come up with some recipes for healthier cakes, lower in fat and sugar. But important for me that they taste 
like cake and not some diet variation. I wanted something with chocolate and tried different bakes to get the right 
balance of sweetness and consistency. These chocolate muffins came out on top, just about 110 kcalories each.
Low fat chocolate muffins
12 muffins
3/4 cup applesauce, unsweetend
1/3 cup granulated sugar
1 large egg
2 tsp vanilla extract
3/4 cup plain yoghurt
1/2 cup all-purpose flour
1/2 cup whole weat flour
3 tbsp cocoa powder
1/4 tsp salt
1 tsp baking soda
1 tsp baking powder
1.7 oz milk chocolate, chopped
Preheat oven to 425 F. Spray a muffins pan with non stick spray.
Whisk together sugar, flour, salt, cocoa,baking powder and baking soda in a large baking bowl.
In another bowl whisk together yoghurt, egg, vanilla and applesauce.
Pour the wet into the dry ingredents and stir to combine. Fold in the chopped chocolate. Try not to overmix.
Pour the batter into pan, alt least 3/4 full.  Bake for 5 minutes and then lower the tempperature to 375F and
bake for another 15 minutes. Insert a toothpick in the center, it should come out clean.
Let them cool in the pan for 5 minutes before you transfer the to a wire rack.
