Lemon cookies with olive oil 
Makes about 25 cookies
2/3 cup olive oil
1 cup granulated sugar
1 large egg
2 1/2 tsp vanilla extract
2 tbsp lemon zest
2 tbsp fresh lemon juice
2 1/4 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp finely minced thyme
Sugar for rolling

Preheat oven to 375 F. Cover a two baking sheets with parchment paper.
In the bowl mix together with an electric mixer olive oil, sugar, egg, vanilla, lemon zest, and lemon juice.
Mix until smooth. Add the flour, baking powder, baking soda,salt and thyme and mix to incorporate.
Using about a teaspoon amount, roll dough into balls and then roll them into granulated sugar.
Place the cookies on the sheet, and flatten slightly with a spoon.
Bake about 8-10 minutes, and then cool on a wire rack.
