Lemon muffins with lime sugar topping

Lemon muffins with lime sugar topping
24 mini muffins or 12 regular
1/4 cup lemon juice
3/4 cup milk
2 cups all-purpose flour
1/2 cup sugar
2 1/2 tsp baking powder
1/2 tsp salt
1/4 cup butter, melted
1 egg
1/2 cup plain yogurt
1 tsp lemon zest, grated
1 tsp vanilla extract

Topping:
2 tbsp butter, melted
1 tsp lime zest, grated
2 tbsp granulated sugar

Preheat oven to 400F. Grease lightly a 24 cup mini muffin pan or put in paperliners.
Add lemon juice to a glass then add milk, set aside. In a large mixing bowl whisk together flour, sugar, baking powder and salt. In another large bowl stir together the milk  mixture, butter, egg, yogurt, lemon zest and vanilla. Add the wet, stir just to combine, don't overmix. Spoon in batter in muffin cups 3/4 full. Bake for 12-14 minutes, or until a cake tester comes out clean. Cool pans on wire racks a for a couple of minutes then turn out on a wire rack. put the medlted butter in a small bowl, gratee the lime zest and mix with sugar. Dip the muffins first in the melted butter then in the sugar.
