Lovely and easy to make dessert. Tart lemon and sweet apricots.
Lemon cream with grilled apricots
4 servings
1 1/4 cup double cream
1/3 + 1 ss granulated sugar
1 lemon, zest and juice
2 apricots, each cut in 4
Icing sugar
Heat up cream, sugar and lemon zest in a saucepan. Let it boil on high heat for exactly
3 minutes. Take off the heat and stir in the lemon juice. Strain into a jug and divide the cream into 4 small dessert bowls or ramekins. Chill until romtemperature and then put in the fridge covered with cling film until set, about 4 hours.
Heat the grill element in the oven as high as it goes. Sprinkle some icing sugar over the apricots and grill until lighly colored. Place 2 sliced of apricots on each ramekins and decorate with a little fresh mint.
