I use lemons a lot both in baking and savoury food. It is very versatile. Healthy too. Lemon is rich in vitamin C and calcium and has been used in medicine for thousands of years. It is highly disinfectant and it is said to be effective in the treatment of rheumatism, arthritis, high blood cholesterol, indigestion, colds and flu. The fruit are also one of the three blessed fruits, in Buddhism - along with peach and pomegranate. Lemon oil is used in aromatherapy. Lemon oil does not affect our immune system but can affect our mood in a positive manner.
Lemon blondies
3/4 cup granulated sugar
1/4 tsp salt
1/2 tsp baking powder3/4 cup all-purpose flour
1 stick butter, softened
2 eggs
2 1/2 tsp lemon zest
2 tbsp lemon juice
Preheat oven to 350 F. Line a 8x inch pan with parcement paper.
Whisk together flour, salt and bakingpowder in a smakk baking bowl.
In another, beat butter and sugar until light and fluffy using a kitchen aid with paddle attatchment or a hand mixer. Add the eggs, one at a time and beat until well incorporated. Then the lemon juice and zest. Add the flour mixture in two batches and mix until you have a smooth batter. Pour into the pan and bake for 20-25 minutes. Remove and cool completely. Dust with a little icing sugar.
