I have trouble finding good bread in my supermarked. So it is back to breadmaking.
I haven`t done that in a while. I started out with using some of my left over rye flour.

Honey rye rolls
12 rolls
2 1/4 tsp active dry yeast
1 1/4 cup tapid water
2 tbsp butter, softened
1 1/2 tbsp honey
1 tsp salt
3/4 cup fine rye flour
ca 2 1/4 cups all purpose flour
Black poppy seeds for decoration
Put flour (2 cups) , rye flour, salt, dry yeast, softened butter and honey in a large mixing bowl or in a food processor. Pour tapid water (slightly warmer than body temperature) into the baking bowl and knead the dough for about 5 minutes using the food processor or 10 minutes by hand, until you get a smooth and elastic dough. Add the remainder of the flour if required. The dough will feel slightly damp when you touch it.
Let it rise under a kitchen towel for 45 min.
Put the dough on floured surface, knead lightly and divide it into 12 balls and shape them into rolls.
Place them on a baking tray with parcement paper. Preheat the oven to 475 F.
Let the rise under a kitchen towel for 30 min. Brush with a little lukewarm water and sprinkle with black poppy seeds. Bake for 7-8 min until golden brown and cooked through. Cool on wire rack.
