These muffins tastes really good and is quite healthy too.! Applesauce, carrots, nuts and seeds. They don`t have any butter or oil and therefor has less calories than regular carrot muffins. I use homemade applesauce. If you use sweetend applesauce, cut down on the honey. As there is no butter or oil, they stick to regular baking liners. You non stick liners or just spray the tin with a non-stick cooking spray.
Healthy carrot and applesauce muffins
12 muffins
2 eggs
3/4 cup unsweetend applesauce
1/4 cup honey
1 cup oatmeal
1/2 cup all purpose flour
1/2 whole weat flour
3/4 tsp cinnamon
1/2 tsp nutmeg
2 tsp baking powder
1/2 tsp salt
1 1/2 cup carrots, finely grated
1/3 cup raisins and dry figs
1/3 cup nuts, chopped
Topping
3 tbsp pumpkin or sunflower seeds
1 tsp maple syrup
- Preheat oven to 375F (175C).
- Grease a non stick 12 muffins form or use nonstick paper cases.
- In a baking bowl whisk together eggs, applesauce and honey.
- Add carrots
- In another baking bowl mix flour, oats, cinnamon, nutmeg, bakingpowder and salt.
- Pour dry ingredients to wet ingredients and mix until just combined.
- Add nuts and rasins.
- Divide the batter into the liners and top with the seed mixture.
- Bake for about 25 minutes. Let them cool on a cooling rack. Freezes well.

I make a lot of applesauce and keep a jar in the fridge. We use it with yoghurt, oatmeal and as jam on scones.
