Summer is finaly here and barbeque season is on. I do like many of you grill at least a couple of times a week.
I use a Weber gass grill. Here is an idea for a mexican marinade for chicken and a spice rub for steak.
Mexican marinade
Enough for 2-3 chicken breast  og leg filets
2 tbsp olive oil
1 tsp crushed coriander seeds
1 tsp grated lime zest
½ tsp paprika
½ tsp brown sugar
1 lime, juice
2 garlic cloves, crushed
1/4 - 1/2 tsp cayenne pepper or dried chili flakes
2 tbsp chopped fresh cilantro
salt and pepper
Use a pestle and morter and crush the corianderseeds. Whisk all the ingredients toghether in a little bowl.
Put chicken in a shallow dish and pour over the marinade. Rub it gently into the chicken meat
and let it marinate for 20-30 minutes. Season with salt and pepper and put on the grill.
----------------------------
Great Spice rub
Enough for 2-3 steaks
1 tbsp ground cumin
1 tbsp dried oregano
1 tbsp dried thyme or rosemary
1 tbsp black pepper, coarsely ground
1 tbsp light brown sugar
1 tsp cinnamon
1 1/2 tsp sweet paprika
1/2 tsp chili powder
1 tsp salt
Mix all ingredients together. Rub on the steaks a couple of minutes before you put them on the grill.
