Five spice chicken

I have been watching Jamie Oivers  Tv show,  15 minute meals. A lot of inspiring and yummi dishes. I do not agree that everyone can make  them in 15 minutes. He cooks faster than most and has every kitchen gadget you can imagine. Who has that?  Us food geek probably has more than most people and I still would come short.
Anyway, even if it takes you longer than his 15 min ,  I recommend you to try.
This chinese chicken is inspired by one of his dishes. I served it th a cold noodle salad. 
Five spice chicken
4 servings
4 medium chicken breast fillets, cut in half
1 tbsp Chinese five-spice
2 tbsp sweet chili sauce
2 tbsp sesame seeds
 1 tbsp olive oil
 salt and pepper

On a large sheet of parcement paper, toss the chicken with salt, pepper and the five-spice.
Make sure the fivespice cover all the chicken pieces. Fold over the rest of the paper, then bash and flatten the chicken with a rolling pin. Heat up a frying pan on medium- high heat. Add 1 tablespoon of olive oil then the chicken. Fry for 2-3 minutes  then turn. It should have a nice brown bland alt colour. Make sure it is cooked through.  Drain away any excess fat from the chicken pan, put the chicken back on the heat, drizzle with the sweet chili sauce, fry for another minute. Sprinkle over the sesame seeds and cook another 30 sec. It will get a nice shine. Transfer chicken to a serving plate and sprinkle it with some chopped fresh herbs.
