This is a great idea for a tasty and fun fish dinner. Very popular amongst the younger ones.

Hot and spicy homemade mango salsa to go with it.
Fish taco with warm spicy mango salsa
2 servings
Mango salsa
2 tsp light flavored oil
1/2 red onion, finely chopped
2 tsp mild curry powder
1 large ripe mango, skinned and chopped
1 tsp fresh ginger, julienne
1 tsp brown sugar
1 tbsp lime juice
1/2 red chili, deseeded and finely chopped
2 tbsp fresh chopped cilantro
Heat oil in a saucepan over medium high heat. Add the chopped onion and cook for 2-3 minutes
until translucent. Add the curry powder, cook for 30 seconds. Pour in the mango, ginger, sugar, chili and lime juice. Stir until sugar is dissolved and cook on low heat for 5 minutes until everything is well blended and start to soften. Add chopped cilantro. Serve.
Fish tacos
2 large filets of cod about 6-7 oz(150 g) each. Or use other firm white fish
2 large wheat tortillas
Lettuce
Onion
Carrot
Cilantro (Coriander)
Lime
Make mango salsa first. Then fry the cod in a fryingpan seasoned with salt and lemonpepper.
Varm up the tortillas. Slice your onion and cucumber and lettuce. Grate carrots and chop cilantro.
Assemble your fish tacos on a plate, vegetables first then fish, squeeze over some lime then salsa
and sprinkle over some cilantro.
