Another variety of energy bar. This time withouth seeds and nuts as requested by my daughter.
This one is quite sweet, so feel free to omit the white chocolate or change for dark chocolate.

Energybar with pineapple, papya, white chocolate and cranberries
1,5 oz dried pineapple
1,5 oz dried papaya
1 oz dried cranberries
2 oz raisins
1/4 cup apple juice
1 sticks butter, cold and diced
1/2 cup wholemeal flour
1/2 cup + 1 tbsp rolled oats
1/4 cup chopped white chocolate
1/4 cup lightly packed dark brown sugar
1/4 cup light packed brown sugar
Preheat oven to 325 F. Line a baking tray 8x8 inch with parcement paper.
Put raisins in a small bowl.Pour in apple juice and leave to soak for 5-10 minutes.
Chop the dried fruit. Place the butter in a large mixing bowl, add wholewheat flour and oat. Rub the ingrediens together by hand into a crumble like consistency. Then stir in the sugar.
Drain the apple juice from the raisins and stir raisins, pineapple, papaya, cranberries and chopped white chocolate into the mixture. Mix well.Tip the mixture into the baking tray pressing it down into the base and corners with your fingertips.
Bake for 20-25 minutes until brown color. Let cool completely in the tray befor cutting into slices.
