An easy made and delicious potato salad with a hint of curry and garlic.
I like spring onion but you can of course use other types of onions too. Just keep in mind that raw onion often is sharp so I would recommend using shallots. This recipe is a great base in which you can add more ingredients.

Easy curried potato salad
2 servings
4 large new potatoes
3 spring onions
3 tbsp sour cream
3 tbsp light mayonnaise
1 tbsp milk
1 garlic clove, crushed
1/2 - 1 tsp curry powder
Salt and pepper to taste
Whisk all the ingredients together, add 1/2 tsp curry and then taste. You might need a little more.
Make the dressing first, cover with clingfilm and put in the fridge.
Skrape the potatoes and boil them with the remaining peel until done. Let them cool to lukewarm before using.
Slice the spring onion and cut the potatoes into cubes. Season with a little salt and pepper.
