A very popular dish for friday night dinner. The kids love it to. I mean what`s not to love. Chicken,pasta, toamto sauce and lots of melted cheese. Yum I make my own pasta sauce ( click on the word tomato sauce in the recipe for the link)
If you don`t have time or can`t be bothered to make your own, just use a store bought sauce. You can also make it somewhat healthier by switching to whole wheat pasta and use light cream.

Creamy chicken caprese pasta
3-4 servings
2 chicken breast , diced small
9 oz Rigatoni or Penne pasta
1 1/3 cups homemade tomato pasta sauce
1/3 cup heavy cream
1/2 cup grated mozzarella
1/4 cup freshly grated parmesan cheese
2 balls fresh mozzarella, sliced
4 tomatoes, each cut in 4
1 bunch of fresh basil leaves
salt and pepper to taste.
Preheat oven to 375 F.
Make the tomato pasta sauce.
Cook pasta according to the packet directions. While pasta is cooking, heat a large frying pan with a litte olive oil. Season the chicken with salt, pepper and a little paprika and dried chiliflakes. Fry until golden and cookes through.
Heat the tomato sauce over low heat in a large saucepan. When warm, stir in cream and grated parmesan. Once pasta is done cooking, drain and add the pasta to the sauce. Stir so the pasta get well coated in the sauce. Add chicken, grated mozzarella, parmesan and fresh tomatoes. mix well and the add half of the basil leafs. Pour pasta mixture into a ovenproof dish and top with fresh slices of mozzarella and rest of the basil. Bake for 20 minutes until cheese is golden and bubbly.
