Chocolate muffins

These chocolate muffins are delicious! Really moist with double chocolate
Chocolate muffins
10-12 muffins
1 cup all-purpose flour
1 cup granulated sugar
1/3 cup cocoa
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup milk
¼ cup vegetable oil
1 egg
½ teaspoon vanilla
½ cup boiling water
4 oz milk chocolate chip
Preheat oven to 325º F.
Place cupcake liners in muffin tin. Spray lightly with cooking spray.
Add flour, sugar, cocoa, baking powder, baking soda, half of the chocolate chips and salt  to a bowl of a stand mixer. Whisk  to combine using your paddle attachment. Add milk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter. Beat on high speed for about 1 minute to add air to the batter. Evenly spoon in the batter into the cupcake liners, about 3/4 ths full. The batter willl be quite runny. Bake for 15-20 minutes until a toothpick inserted in the center comes out with moist crumbs. After about 10 minutes open the oven door and sprinkle over the rest of the milk chocolate chips. Bake until done.  Remove from the oven and allow the cupcakes to cool completely.
