These savory muffins is filled with cheese, chorizo and herbs. It´s important to use fillings with lots of flavor, otherwise they will be quite bland. Bacon instead of chorizo is also a good alternativ. They are as good cold as they are freshly made. Well, that´s not really true. Freshly baked straight from the oven will always be best......
Cheese muffin with chorizo
12 muffins
2 cup all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
3 eggs
1/4 cup vegetable oil
3/4 cup natural yoghurt
4 oz mature cheese, cut in small cubes
4 oz chorizo finely, diced
1 tbsp chive or oregano
Preheat oven to 400 F.
Whisk together flour, salt and baking powder in a bowl.
In another mix the eggs lightly with a fork. Pour yoghurt, eggs and oil into the flour mix. Mix well.
Then fold in chorizo, cheese and herb. The batter will be quite thick. Use a non-stick muffins/cupcake pan.
Grease with a little oil or use papercups. Fill each cup about 2/3 full. Bake for 25 min.
Let cool on a wire rack.
