Cauliflower steaks with spicy corn salsa

A cute little dish if you don`t want to make a full dinner with meat and veg.
Seared cauliflower steaks with a spicy corn salsa. Cauliflower is more versatile than you think.
Try to bake it in the oven with middle eatren spices or even deep fry cauliflower florets. Real yum! 
Cauliflower steaks with spicy corn salsa
2 servings
1 large head of cauliflower, stems lightly trimmed
1 ear of corn, shucked
1/8 cup vegetable oil
1/2 fresh red chile, seeded and sliced
2 scallions, chopped
2 tbsp freshly chopped mint
2 tbsp freshly chopped parsley
Salt and freshly ground black pepper

Cut three 3/4-inch-thick center slices from the cauliflower to form "steaks." 
In a saucepan of boiling salted water, cook the corn until tender, about 3 minutes. Drain and cool, then cut the kernels  from the cobs. Heat 1 tbsp oil in a frying pan on medium high heat. Add the chile and cook for 30 sec. Add scallions and cook until softened, about 1 minute. Stir in the corn. 
Add salt and pepper, and fresh herbs. Keep varm.
At the same time heat up another large frying pan on high heat. Add 2 tbsp oil. Add 3 cauliflower steaks and fry over medium-high heat until browned and al dente, about 3 minutes per side. Just turn once so they dont brake. Transfer to a serving dish and spoon over the spiced corn salsa.
